Peach Cobbler

Sorry, blogger was being stubborn earlier but I think its working now...

The other day Anthony made some delicious chili, so I decided to make some peach cobbler for dessert... we've had some peaches for a while now and they were past the point of eating plain so I found a cobbler recipe that turned out to be delicious, so I thought I would share...

Ingredients:
6 peaches, pealed, pitted and sliced
1 tsp cinnamon
1 cup white sugar

1/2 c shorting
1 cup white sugar
1 1/2c all purpose flour
2 tsp baking powder
1/2 tsp salt
1 c milk

1 c boiling water
2-3 tbs butter

1. Preheat oven to 350 degrees F. Grease a 9X13" baking dish.
2. Stir together peaches, cinnamon and 1 c. white sugar. Set aside.
3. In medium bowl, cream together shorting and 1 c. white sugar. Mix in flour, baking powder, and salt alternately with the milk. Pour into prepared pan and top with peach mixture.
4. Drop butter in boiling water and pour all over peaches.
*Its going to seem like your doing something wrong, but trust me...
5. Bake in preheated oven 40 to 45 minutes, until golden brown.

We like it served with vanilla ice cream...

First Day of Autumn

Anthony went to Badger Creek Monday morning with his IBC class. It is the first time we've been away from each other since we got married...
I miss him
but he is coming home tomorrow! Yay!

School

Anthony and I started school last Thursday. Classes have been good so far. Anthony is taking IBC. Its like 4 classes into one and you have the experience of starting and running your own business on campus. You can read more about it here and here if you are interested. I am taking a 2 food classes (yes, I actually get to cook! So I'm pretty excited about that). And some other classes for my minor (Home and Family Living). I am also taking D&C, which is pretty intense but it seems like that's how all religion classes are here.
Anyways, things are good :)

Labor Day

Yesterday Anthony and I decided to go to the eastern Idaho state fair. It was in Blackfoot which is little less than an hour from Rexburg. This fair was different than what Anthony and I are used to in Georgia. First of all it was HUGE! I think everyone from Idaho was there. Haha, and it was like a real fair. People would bring their most prized pigs and cows and they would be judged. It was so funny. Here is a picture of the vegetables that won prizes.The biggest pumpkin was 423 lbs! Crazy! We also rode the ferris wheel and Anthony tried to win an x box by getting 3 balls into a basket. Unfortunately the balls were too bouncy and kept falling out. But it was funny watching him try and listening to the guy trying to convince him to try more. Anyways, we ended the night with a delicious funnel cake! (What's a fair without funnel cake?)

Fun Game


Because we live in Rexburg, you often have to look for things to do to keep your self from extreme boredom. The other day I was on the internet looking for games to play and I came across this game. Its called "This Is The Only Level." Its really fun, and funny. It doesn't take very long to beat it either, maybe 30 minutes. Anyways, I thought I would share it with you. Here is the link

More of our Vacation

Here are some more pictures of our vacation...
This is us at Hollywood Studios at Disney (Right) We went to the Indiana Jones show and Anthony was chosen to be one of the towns people... it is a whole lot more entertaining when you know someone on stage, haha! It was fun watching him.

Animal Kingdom is probably Anthony and I's favorite park... however Epcot is pretty cool too. I think its because Disney did such a good job with it. You really feel like you are walking through a jungle. Haha anyways, this is us at Animal Kingdom after the water ride...

Epcot. We decided to go to all the countries, Anthony had never done them before and honestly I couldn't remember them much either... It was pretty impressive. Disney always does such a good job.We also took some time and decided to go to the beach one day, thats one thing that we really miss while were out here in Idaho.Anthony wanted to dig a hole all the way to China... or wherever, but
then I convinced him that we should just bury him. I made him into a Merman, haha. We were also lucky enough to be there when Anthonys younger brother, Daniel, graduated from basic training. So we drove down to Macon and spent the day with him. His friend, Brett, also came with us.




We got back to Rexburg little over a week ago and miss Georgia all ready :( But were excited that we get to come home for Christmas!
Also one of my best friends growing up (yeah I have a lot of those) Rachel Fairclough got engaged last night and I am so happy for her and her fiance! Congratulations!
